Creamy pumpkin soup

Warm bowls for cold nights. Roast the pumpkin until the edges caramelize, then blend until silk-smooth.

Ingredients

  • 1 medium pumpkin
  • 1 yellow onion
  • 3 cups vegetable stock
  • 100ml cream
  • 80g feta, crumbled
  • Pumpkin seeds, toasted
  • Olive oil, salt, smoked paprika

Method

  1. Heat the oven to 200°C. Cube the pumpkin and toss with oil and salt.
  2. Roast 30 minutes until soft and browned at the edges.
  3. Soften the onion in a pot, add pumpkin and stock, simmer 10 minutes.
  4. Blend until smooth, stir in the cream, and season.
  5. Ladle into bowls. Finish with feta, pepitas, and a pinch of paprika.
